Inspired by one of KIND’s Fruit and Nut Bars, and now one of my all time favorite recipes, this Blueberry Cashew Bar is a MUST try!

Blueberry Cashew Protein Bar

Ingredients
  1. 2 Cups Organic Quick Cooking Oats
  2. 2 Cups Brown Rice Crisps
  3. 1 Cup Raw Almonds, chopped
  4. 4 Scoops Vanilla Whey Protein Powder
  5. 1/2 Cup Unsweetened Organic Coconut
  6. 4 T Chia Seeds
  7. 6 T Golden Flax Meal
  8. 1 t Celtic Sea Salt
  9. 2 Cups Cashews, roasted and unsalted (If you don't have a food processor, buy pre-made cashew butter)
  10. 1/2 Cup Goji Berries
  11. 1/4 Cup Raisins
  12. 1 Cup Blueberries, fresh
  13. 1/4 Cup Honey
  14. 2 T Pure Vanilla Extract
  15. 1/2 Cup Hot Water
Instructions
  1. Start by combining the fresh blueberries, honey and vanilla extract in a small saucepan. Let simmer until the blueberries burst and the mix becomes slightly syrupy about 5 - 7 min. Let the mixutre cool slightly.
  2. Meanwhile, soak the goji berries in the hot water.
  3. In the bowl of a stand mixer (if you don't have one that's okay, just you a spatula and big mixing bowl) combine the oats, brown rice crisps, protein, Coconut, chia, flax, salt and raisins.
  4. Pulse/Chop the almonds and add to the dry mixture.
  5. Place the cashews in a food processor and process until the cashews are a paste (a.k.a. cashew butter).
  6. Strain the Goji berries, but KEEP THE WATER!
  7. Add the goji's and cashew butter to the dry mix. With a paddle attachment and on lowest speed, combine everything together.
  8. Slowly add in the blueberry "syrup" and half the Goji water and mix until everything is combined.
  9. Add the remaining Goji water if necessary, but be careful not to add too much liquid as this will make your bars very sticky.
  10. Lightly spray a 9 X 13 Pyrex dish with Olive Oil and dump the mixture into the pan.
  11. Tear off a piece of parchment paper, wax paper, plastic wrap, or whatever you have on hand that is big enough to cover the top of the entire dish and press the mixture until it's as compact as you can get it.
  12. Cut into your desired bar-sized or bit-sized pieces and enjoy!
Notes
  1. Tip: Use a the bottom of a second baking dish to press down the mixture instead of your hands. This makes everything nice and even!
