Oh boy, have I been craving a cookie… Maybe it has been my recent stops at the malt shop or all the chocolate the Easter Bunny has brought, but I have had a sweet tooth! The day’s of Mrs. Hess making Snikerdoodles and Brownie lava cake à la mode are over. So this was a great opportunity to rub elbows with Elisha in the kitchen and become a “Cookie Monster”. Not to sure if Mrs. Hess was excited about me making my mess in her food prep area, but I took my 2x2ft square and began. Now as you could guess I wouldn’t go for your run of the mill cookie, but yet a more healthy option. That is where I met the Civilized Caveman. It of course by the name of the site be all about paleolithic diet, which if that’s your bag cool, if not you will be amazed at what food you love could be transformed into something wonderful with other ingredients. The recipe I swiped from his archives and I share with you is Macadamia Nut Apple Cookies. My trial and error I think came out awesome! Mrs. Hess even enjoyed the taste, but the kids didn’t even try them… I think it was because I made them:(  I even tried placing chocolate chips in the cookies after the rejection and Makenna just picked them out…oh well more for me. Other things I done differently or botched was I chopped my apples to big then decided to process them into the dough, lets just say I got carried away with the pulse. On that note, take your time because Macadamia nuts are expensive. I would hate for you to waste them. In hindsight I think any nut would be good for this recipe, so be creative. I think next time I will use Pistachios… YUM

Macadamia Nut Apple Cookies

Ingredients

  • 2 cups macadamia nuts
  • 1 large egg
  • 4 tablespoons unsalted butter (60 grams) could experiment with other options, apple sauce, greek yogurt, olive oil, sky’s the limit on butter substitutes
  • 1/3 cup organic honey
  • ½ teaspoon sea salt
  • ¼ teaspoon allspice
  • ½ teaspoon cinnamon
  • ¼ coup coconut flour
  • 1 teaspoon baking soda
  • 1 small apple, diced

Directions

  1. preheat your oven to 325 Degrees Fahrenheit (163 Celsius)
  2. Place your macadamia nuts in your food processor and process to a coarse butter scraping down the sides as needed
  3. Add your egg, butter, and honey and process to combine
  4. Add in your salt, all spice, and cinnamon and process to mix well
  5. Add your coconut flour and baking soda and process one last time
  6. Transfer to a bowl and mix in your diced apples
  7. If your dough is hot because of your food processor, chill your dough in your refrigerator
  8. place dough however big you’d like your cookies on a parchment or silicone lined cookie sheet. Note might need to press them down dough as you find out is thick
  9. Bake for about 15 minutes
  10. let cool and enjoy!
