When Justin told me a few years ago that pork chops should always be served with applesauce, I thought “how disgusting!” But apparently this is a thing…and has been for many families for many, many years. When I had pork chops as a kid, the only thing they had to be was lightly breaded and fried. Most likely they’d be served with mashed potatoes and fried okra or something, definitly not applesauce. 

The thought of it still kind of grosses me out, and to be honest, I have yet to try any of my pork chops smothered in applesauce. I’m cringing just thinking about it! I have, however, found a happy medium for the both of us by making a grown-up version of this comfort food combo. It’s a very simple, full of flavor recipe that looks gorgeous on a plate. You have to try it!

Roasted Apples and Onions

Ingredients
  1. 3 Fuji Apples (We only buy Fuji's, but any baking apple will do)
  2. 2 Onions (Red or Yellow)
  3. 1 t Dried Thyme
  4. Salt & Pepper
  5. Olive Oil or Coconut Oil
Instructions
  1. Preheat Oven to 450 and set a large baking sheet/pan aside.
  2. Peel and core the apples, then slice in 1/4" thick slices.
  3. Slice the onions in 1/4" thick slices.
  4. Lightly coat the apples and onions with the oil of your choice in the pan.
  5. Sprinkle thyme, salt and pepper, then toss to evenly season.
  6. Roast for 40 minutes, tossing the mixture about half way through to ensure even roasting.
Notes
  1. Timing: Begin the Balsamic Glazed Pork process about 10 minutes after the apples and onions go in the oven.

Savory Sweet Potato Puree

Ingredients
  1. 1 T Olive or Coconut Oil
  2. 1 Yellow Onion, diced
  3. 3 Sweet Potatoes, peeled and cut into 1-inch pieces (about 1.5 pounds)
  4. 1 T Dijon Mustard
  5. 1 T Whole Grain Mustard
  6. 1 T Honey
  7. 1 cup Low-Sodium Chicken Broth
  8. Salt & Pepper
Instructions
  1. Heat oil in a dutch oven or large pot.
  2. Add onions and sweet potatoes and saute for about 5 minutes.
  3. Add mustards, honey, broth and salt & pepper.
  4. Bring to a boil, then reduce heat and cover to simmer for about 20 minutes or until the potatoes are tender.
  5. Place mixture in a food processor/blender and process until smooth.
  6. Add more broth if it's too thick.
Notes
  1. Timing: Start this process immediately after placing the Roasted Apples & Onions in the oven.

Balsamic Glazed Pork

Ingredients
  1. 4 Center Cut Pork Chops or 2 Pork Tenderloins
  2. 1/2 cup Balsamic Vinegar
  3. 2 T Maple Syrup
  4. Salt & Pepper
  5. Oliv Oil
Instructions
  1. Preheat the oven to 450.
  2. Line a Pyrex baking dish with foil.
  3. Combine the vinegar and maple syrup in a saucepan over medium-high heat.
  4. Bring to a boil, then reduce the heat to simmer for 3 - 4 minutes until slightly reduced.
  5. Let the vinegar mixture cool for a couple minutes.
  6. Meanwhile, place the pork in the foil-lined dish and lightly brush with olive oil, then sprinkle with salt and pepper.
  7. Pour the vinegar mix over the pork and place in the oven for about 10 minutes
  8. Flip the pork and cook for another 10 minutes or until the pork reaches an internal temperature of 150.
  9. Remove the pork from the oven and let rest for 5-10 mintes before serving.
Notes
  1. Timing: Start this process after the Savory Sweet Potatoes start to simmer.

  1. 1 bunch of Asparagus, woody ends removed
  2. Salt & Pepper
  3. Olive or Coconut Oil
Instructions
  1. Preheat oven to 450.
  2. Very lightly coat the asparagus with oil, salt & pepper.
  3. Place on a baking sheet and roast for 10 - 15 minutes or until they have reached a desired tenderness.
Notes
  1. Timing: Begin this process after the Balzamic Glazed Pork goes in the oven.
  2. Instead of dirtying another sheet pan, just throw the asparagus on top of the apples and onions to roast.

There will be a bit of “juice” left after the pork chops are cooked. Feel free to drizzle some of that sweet goodness over your food after plating….it really brings all the flavors together quite nicely.
