Every year immediately following Mother’s Day our lives get absolutely crazy. The sun’s out, the kids want to live in the pool, Justin starts his continuous stream of out of town work, and we start what I like to refer to as our “celebration season.” Holidays, birthdays, vacations and anniversaries are the theme of this 5 month period. About every other week, someone in our immediate family has a birthday. Mix in a few holidays, our wedding anniversary, and one serious issue with going overboard on party planning and hosting, I am one BUSY (crazy) person!

Next Up for July: Sunshine’s Birthday, the 4th of July, a business trip to Florida & a Wedding in Oklahoma!

So that being said, we are entering into our second year of Sunday Food Prep, and I am still as passionate as ever about making sure it gets done no matter what. It’s important to me that we always have healthy choices in our home. I may not post weekly about my prep, but rest assured, I am prepping our food.

  5. Justin’s Lunches: Beef Taco meat, Corn Salsa, Shredded Cheese, and Brown Tumruric Rice
  6. Pumpkin Protein Muffins

  2. Sirloin Patties
  3. Greek Yogurt Honey Mustard
  4. Steamed Vegetables (Frozen)
  5. Garlic Quinoa
  6. Romaine Salad Mix
    • Top with Sirloin Patties, Honey Mustard and a little shredded cheese
  7. Lemon Pepper Chicken 
    • Pair with steamed vegetables and garlic quinoa for a light, healthy lunch
  8. Kale, Sausage, and White Bean Pasta (Portioned)

  1. Banana Berry Protein Muffins
  2. Pork Carnitas
  3. Greek Chicken
    • Put on a Whole Wheat Pita pocket and top with Tzatziki and Cucumber Salad (see the photo here)
  4. Red Onion & Cucumber Salad
  5. Red Potato Breakfast Mix (to go with Justin’s eggs in the morning)
    • Roasted Red Potatoes, Bacon and Onions
  6. Tzatziki (Cucumber-Dill Sauce)
  7. Romaine Salad Mix with Carrots, Raddish, Celery, Green Onion & Cilantro
  8. Guacamole
