You may have noticed by now that I make this dish a lot. It is really easy to make, the flavor is amazing and I can make a huge batch that lasts me all week and then some. I almost always eat this at my desk at work as one of my daily meal options, and I serve it up with some Chili-Spiced Sweet Potatoes. The aroma fills the office and it never fails, someone always has to come see what I’m eating.

I saw this recipe on one of my fav clean eating sites, He and She Eat Clean, and loved it immediately because I didn’t have to do anything except throw everything in a cropckpot! This makes Sunday food prep just that much easier. I kicked up the flavor quite a bit with my version by adding fresh peppers and a different combination of spices. You can do just about anything with this recipe and add anything your little heart desires.

Ingredients
  1. 4 - 5 Boneless, Skinless Chicken Breasts
  2. 1 Yellow Onion
  3. 4 - 5 Roma Tomatoes
  4. 2 - 3 Jalapenos
  5. 1 Red Bell Pepper
  6. 3 Garlic Cloves
  7. 1 c Salsa (We use On the Border: Medium)
  8. 1 Bunch of Cilantro
  9. 1 Lime, juiced
  10. 1 T Ancho Chili Powder
  11. 2 t Cumin
  12. 1 t Coriander
  13. ½ t Celtic Sea Salt
  14. ¼ t Black Pepper
Instructions
  1. Rinse, pat dry, and trim the chicken breasts, then place them in the crockpot.
  2. Chop your onions, peppers and garlic, then core, seed and dice the tomatoes.
  3. Add spices to salsa and mix well.
  4. Pour the chopped mixture and salsa mixture on top of the chicken and cook on low for 6 - 7 hours.
  5. Shred the chicken with some forks. By this point the chicken should just fall apart.
  6. Chop the cilantro and juice your lime and mix both into the pot.
