Turkey is a staple of my diet. It’s one of my favorite proteins because it’s lean, it doesn’t break the bank and you can add just about any flavor profile to it and it will taste great. My favorite is still my Greek inspired Turkey Skinikopita, but this new mix of southwestern flavors runs a close second. This is great as a stand alone meal, but I especially like pairing it with a big bowl of salad greens, chili-spiced sweet potatoes, salsa and avocado.

Ingredients
  1. 3 lbs Ground Turkey
  2. 4 cloves of Garlic
  3. 1 small Red Onion
  4. 3 Jalapeno Peppers
  5. 2 Red Bell Peppers
  6. 1/2 cup Black Beans, drained and rinsed
  7. 2 t Dried Thyme
  8. 1 T Ground Cumin
  9. 1 T Chicago Steak Seasoning (recipe below)
  10. 2 t Tabasco
  11. 1/4 - 1/2 cup Cilantro
  12. 1/2 Lime, juiced
  13. 2 T Olive Oil
Instructions
  1. In a dutch oven or large heavy-bottomed pot, heat the olive oil over medium-high heat. Add the turkey, season with a little salt and pepper, and cook until almost done. Drain off the liquid, then set aside.
  2. While the turkey is cooking, dice the onion, peppers, jalapenos and garlic. Add the diced ingredients to the pot after you remove the turkey. Cook until tender, about 5 minutes, then add the turkey back in.
  3. Add the black beans and season with thyme, cumin, Chicago Steak Seasoning and Tabasco. Continue cooking until the turkey is completely done.
  4. Add the chopped cilantro and lime juice off the heat and season with salt and pepper as needed.
