Sunday Food Prep 03.03

The name of the game this week is FRUGAL! We are doing everything we can to save, save, save right now, so I made sure to make a menu that would produce plenty of leftovers.

On the menu this week…

Breakfasts and Daytime (Meals 1-4)

Dinners (Meal 5)

Sunday

Sunday Roast Chicken with Carrots and Onions and Cauliflower Mashed “Potatoes”

  • Leftover chicken will be used to make the Creamy Chicken Salad

Monday

Zucchini Lasagna

  • Leftovers will be enjoyed all week for a daytime meal option, yum!)

Tuesday

Juevos Rancheros on Whole Wheat Tortillas with Chili Spiced Sweet Potatoes

Wednesday

Creamy Chicken Salad on Whole Wheat Toast

Thursday

Whole Wheat Spaghetti with Italian Sausage Meat Sauce

Friday

Pizza of course! Homemade whole wheat pizza dough topped with low fat mozzarella, chicken and vegetables

Saturday

Like always, we’ll play this one by ear. I’m thinking maybe we’ll go for whatever fish looks good at the market. Being in Springfield, MO most of the time it’s pretty slim pickins!
