Oh my goodness, today was challenging. Not only did we lose an hour of sleep (thank you daylight savings, blah!) but our daughter came crawling into bed with us at about 7 o’clock this morning. This isn’t out of the ordinary, so we thought nothing of it. A few minutes later Cohen, our 21 month old, comes in and crawls in bed with us as well. So cute….except he was soaked! His new trick the last couple of months has been to pee so much at night that he soaks through his diaper, his pants, the bed sheets. It’s super fun. So I jump out of bed to go change him.
Meanwhile, Justin gets out of bed because Mak said she got sick. He went to check things out around the house, and she wasn’t kidding! She threw up in her bed, then moved to the couch and threw up on the floor next to it (thank goodness for wood floors!) Then apparently she moved to the couch in our office/dog room and slept for a while. No puking there though! She did all this and we had no clue. She even changed herself and attempted to clean the mess she made on the floor. We asked why she didn’t come wake us up and she said we were a family and family helps clean up (so sweet!). My first though was, who is this child and what has she done with my daughter, then I immediately felt awful. Really awful, and then proud. What a big girl she is for only being 4!
So far, no one else is sick. Mak slept quite a bit and watch movies for the majority of the day. She didn’t eat anything except some fresh from the oven Pumpkin Protein Bread. The kid loves the stuff! Cohen was as rambunctious as all get out, which made my food prepping even more difficult. Having to constantly stop what I’m doing to give the little man some attention, press play for the princess, or start another load of a never-ending mound of laundry…ugh. I’m incredibly glad this day is almost over!
With all the stopping and interruptions today, I was finally able to prep the following…

Dinners (Meal 5)
Mediterranean Pizzas, one with Homemade Whole Wheat Pizza Dough and another with Cauliflower Pizza “Dough”
Breakfast: Scrambled Eggs Done Right, BACON! and Coconut Banana Pancakes (We were going for Paleo, but really I knew Justin needed some bacon!)
Dinner: Roasted Pork Tenderloin with Apples and Onions, Roasted Brussels Sprouts and Japanese Sweet Potatoes
Japanese sweet potatoes are friggin’ awesome. If you have never tried them, you must find you some. We got ours at Mama Jeans Natural Market here in Springfield. They have a much darker outer coloring, but are white inside. They are sweeter than your regular sweet potato and are best served roasted. I mashed ours simply because I ran out of room in our oven. What I would give for double ovens…..sigh.
Breakfast: Scrambled Eggs Done Right with red peppers, onions, mushrooms, asparagus, garlic and more bacon
Dinner: Fish Tacos with Honey Cumin Slaw and Chipotle Yogurt Sauce
Let me just say, that I was beyond excited to make my fish tacos this weekend. It’s been way too long since I’ve made them; this only because of how I prepare the fish….I fry them. Shhhh! After today, I don’t know if it was all the distractions, the stress from wondering if Mak has the flu and who’s going to get it next, but I completely bombed this dish. Boo! My plan was to still enjoy the Panko breading (which is probably my favorite part of this recipe) but I was going to bake them instead of frying them. I am now convinced I am incapable of preparing fish if it isn’t fried. I screw it up every time! We still ate the colorless, somewhat soggy pieces of not cheap cod, but I was not happy about it! Horrible way to end the day! Keeping my fingers crossed that by tomorrow morning I can shake off this disappointment. Leg day can’t get here soon enough!
