This was more like a food prep weekend! Our schedule had us all out of whack…between keeping our house clean enough for prospective buyers to come see, leaving so realtors could show the house, grocery shopping, playtime with the kids, work and preparing for Easter, I finally managed to complete our food prep for the week. Exhaustion doesn’t quite describe how I feel at this point. I cannot wait until tomorrow when I start a new week off with another leg day and go to work to relax and get some peace and quiet!
So in an attempt to not completely lose my train of thought caused by my brain shutting down, I will get right into it….

- Blood Orange Vinaigrette
- Yogurt Dip
- Gluten Free Lemon Poppyseed Cookies
Yes, this is a lot of food. More than we usually consume in a week, but my intention is to freeze a portion of some of these meals to use next week as well. Having to pack everyone up and leave at a moments notice to show the house has interrupted our dinner time at least a couple times already, so I want to eliminate as much cooking as I can.
I’m amazed I was able to get food on the table this weekend, but somehow I managed, and was incredibly tasty if I must say so myself! Here is what we ate…
Tacos! I mixed up my own little blend of seasonings and tossed it in with some lean ground beef and onions. Served up with some chunky guacamole and Tumeric brown rice, the impromptu Mexican night was a success…with leftovers for lunch the next day!
I have no idea what to call what I made for breakfast, because I had full intentions of making something completely different! Tosca Reno posted a beautiful brunch recipe on Friday that I just had to try. BUT, it’s really hard to make her Eggs Florentine, without spinach and lemon…two items I repeatedly forgot to buy during my many trips to the store. So I used the Paleo bread I made for the Eggs Florentine, topped with with some leftover guacamole from the previous night, bacon and sunny side up eggs.
For lunch we had taco salads with leftovers from Friday, and for dinner we had Kalua Pig from NomNomPaleo.com along with some Creamy Cole Slaw and Sweet Potato Fries.
So we have a few leftovers from this meal. haha. Good thing pork freezes well, it would be so wrong to let all that tender, juicy, flavorful meat go to waste!
Justin grew up treating Easter sort of like Christmas, in that when he would wake up, the Easter Bunny would have left out his basket of goodies and hidden all the eggs for him to find. This is just craziness to me, but whatever, as long as the kids are into it, we will continue to do it. Granted, the weather has been beautiful and warm the past couple of days, but hunting for eggs at 7:30 a.m. in the cold wet grass seemed ridiculous. I’m really, really glad my four year old felt the same way. She couldn’t believe the Easter Bunny would do such a thing. I think the preschooler is onto something!
Anyhow, we ate my new favorite breakfast…coconut flour pancakes, bacon and eggs, then I was off to the store AGAIN to get supplies for a veggie and dessert dish to take to Sunshine’s. (Sunshine is what the kiddos call Justin’s mom) I had no idea what I was going to bring, I walked up and down the aisles at Wally (Walmart) and even changed my mind a couple times which meant restocking some items. I was getting some weird looks for sure. I stumbled across an Emril recipe as I was frantically searching on my iPad for ideas. It was a Arugula and Blood Orange Salad….sounded awesome. And to my huge surprise, Wally actually had blood oranges. I just about fell over! Wally never has cool stuff like that! I had to buy a whole bag of them, so I decided to go ahead with a Fruit Salad/Fruit Pizza dessert. It seemed far healthier than any cake or pie option.
Fruit pizzas are typically made with sugar cookies as the base, a cream cheese, whipped cream concoction as the sauce and fruit as the topping. The fruit part was easy, and I decided to go with a Greek Yogurt-Honey-Lemon mixture for the sauce. The sugar cookie substitute was the challenging part, but I found a super easy, soooooo good gluten free cookie recipe on ElanasPantry.com that I will forever hold close to my heart. Gluten Free Lemon Poppyseed Cookies. Yum. Both the salad and the mini fruit pizzas were a huge hit and I will for sure be making them both again very soon.
Sunshine roasted a ham and some new and purple potatoes. She also made some sweet potatoes spiced with cinnamon and nutmeg….always a good combination. The food was yummy and I might have eaten a bit more than I needed. I blame it on the bunny.
It’s hard for me to even think of food right now because I feel like all I have done today is eat, but I’ll suck it up!
Our weekly dinners will look something like this…
Chicken Fajita night! I prepped all the vegetables and cut all the chicken, so all I have to do is season and saute. I will however have to fully prepare the Chile Spiced Sweet Potatoes that will serve as our side, but this will only take a couple minutes. No worries!
Zucchini Lasagna. This frozen little lifesaver was prepped last week when I had an Aha! moment and decided to make two small lasagnas instead of one huge one. (It takes me a while sometimes, but I get there eventually!)
Leftover Pulled Pork, Creamy Cole Slaw and Sweet Potato Fries
Butternut Squash and Apple Soup with Grilled Cheese sandwiches made on the Paleo Bread I made on Friday. I am fully aware that a grilled cheese sandwich made on Paleo Bread is a complete oxymoron, but I kind of don’t care. It sounded good and I’m going with it! So all I have to do to get dinner on the table is reheat some soup and melt some Extra Sharp Cheddar on some breadless bread! Hopefully the caveman gods don’t strike me down for doing such an awful thing.
