I literally just finished making this to go with our dinner tonight and we can’t keep our hands out of it! You are truly missing out if you don’t try this one. It’s made with all fresh ingredients and is super quick and easy to whip up.

Creamy Guacamole

Creamy Guacamole

  • 3 – 4 Roma Tomatoes
  • 2 – 3 Jalapenos
  • ½ Onion (Red or Yellow)
  • 2 – 3 Garlic Cloves
  • 3 Avocados
  • ½ c Plain Greek Yogurt
  • 1 Lime
  • 1 bunch of Cilantro
  • ½ t Ancho Chili Powder
  • ¼ t Black Pepper
  • ½ t Kosher Salt
  • ½ t Celery Salt

Be warned….this makes a TON of guacamole. Feel free to cut the recipe in half.

Seed and roughly chop the tomatoes and jalapenos. Roughly chop the onion and garlic as well, then throw them all in a food processor. Squeeze half the lime into the mixture, add the cilantro, and pulse until it begins to look like salsa. Pour contents into a bowl and set aside.

Peel and seed the Avocados and add to the food processor. Squeeze the other half of lime and add the yogurt. Pulse until smooth and creamy. Add desired amount of salsa, continue to puree until smooth. (I almost always have leftover salsa, that I save to use for my eggs in the mornings) Add the spices, pulse a few times more to incorporate. Scrape the sides of the bowl if you need to in order to get a consistent texture.

Now, brace yourself. You are about to eat the best guacamole you have ever tasted. Do your best to not over do it!
